Roasted Broccolini with Lemons and Garlic
This easy sheet-pan recipe is one of our favorite ways to cook broccolini; we wrote about it in January 2021. Our version is vegan; it’s also wonderful with half a cup of finely grated Parmesan tossed with it before roasting, or about 1/4 cup sprinkled on after roasting.
Serves 4.
Ingredients
2 bunches broccolini, stems trimmed
1 lemon, sliced into thin rounds
3 garlic cloves, peeled and roughly chopped
1/2 teaspoon salt
1 tablespoon olive oil
1/2 teaspoon Aleppo pepper
Instructions
1. Heat oven to 425 degrees. Place the broccolini on a sheet pan, strew with the lemon slices and garlic. Sprinkle the salt over all, drizzle with olive oil, strew with Aleppo pepper and use your hands to toss to mix and coat the broccoli.
2. Roast for 15 to 20 minutes, until the broccoli is just starting to become tender, or two or three minutes longer, if you’d like the lemons a little charred.
